samosa eggrolls with spicy mango sauce
for the sauce:
peel and dice one ripe mango into small chunks. dice one jalapeno. do not discard seeds. put mango chunks, jalapeno and seeds into small sauce pan and add 3 tablespoons of sugar, 3tablespoons of rice vinegar, one clove of chopped garlic and one tablespoon (more or less if you'd like) of sambal oelek /chili paste. simmer on low to medium heat for 10-15 minutes, sauce should be kind of thick and the mango should cook down and mush. let the sauce cool and pulse through a food processor until smooth.
for the filing:
peel and dice two (2) large baking potatoes into small chunks. finely dice one half (1/2) of a white onion. finely dice three medium carrots into 1/4" pieces.
add one tablespoon of oil to a 12"ish skillet. let oil heat on medium for a minute or two. add onion and two cloves of chopped garlic. cook and stir until onions start to turn clear. add the potatoes and mix well with onion and garlic. cover the mixture with just enough vegetable stock that the mix is just peeking out. cover mixture and simmer for 15 minutes, occasionally stirring. once potatoes feel fairly soft and mush-able, add carrots and a heaping tablespoon of curry powder, a teaspoon of garam masala, a teaspoon of cumin and a 1/2 teaspoon of chili powder....black mustard seeds would be great too but yeah i don't have those....mix together thoroughly. add a cup of frozen peas that are pretty much thawed. cook the mixture for another 3 minutes and remove from heat.
place a heaping spoonful of the mixture in the center of an eggroll wrapper.
fold the wrapper however you're little origamically challenged ass wants to.
heat some vegetable oil in a pan. probably 1/2" deep will do. i don't know what the temp is because i'm without oil thermometer, but i had the heat turned between low and medium. just test the oil with a small piece of wrapper and see how it's cooking. fry until golden and flip for other side to fry the same. remove from the oil and place on a paper towel, patting off excess grease.
